Today's recipe is one of my favorite winter soup options. And, as you'll see below, it also happens to be great for boosting your antioxidant levels.

Besides being the perfect comfort food, this hearty soup boasts an unexpected nutritional powerhouse: thyme. Both thyme and thyme oil have demonstrated antioxidant protection in controlled studies. Enjoy, and be well!
1 cup split green peas, rinsed and checked for stones
6 cups water or vegetable stock
1 tablespoon extra-virgin olive oil
1/4 cup sliced onion
1/2 cup sliced leeks, white and light green part only, well rinsed
2 tablespoons minced garlic
2 cups frozen green peas, thawed
1 tablespoon minced fresh thyme
1 tablespoon minced fresh tarragon
1 tablespoon minced fresh dill
Pinch of black pepper
1/2 teaspoon sea salt
